Low Calorie Fruit Salad

8 oz can pineapple chunks with juice
1 1/2 cup small strawberries or seedless grapes
1 cup apple cubed
1 cup orange sectioned and cut into bite sized pieces
Iceberg or Roman lettuce leaves
1/2 cup low fat pineapple yogurt
1/2 tsp. poppy seeds


Drain pineapple, reserving 1 Tbsp juice. Cut and mix fruit in a bowl and toss lightly.
Salad dressing: Combine yogurt, poppy seed and reserved pineapple juice and mix. To serve, line
plates with letuuce leaves and arrange mixture on letuuce. Drizzle dressing over fruit. Serve with
Kay's Honey or Cinnamon Almond Cookie Bites. Makes 5-6 servings.
