Chickpea Salad Mediterranean Style

16 oz can chickpeas, rinsed and drained
1/2 medium red onion, thinly sliced
1 cup cucumber, peeled and chopped
1 cup roasted red pepper chopped
2 Tbsp chopped parsley
2 cloves garlic, chopped
3 Tbsp lemon juice
2 tsp extra-virgin olive oil
1/4 tsp salt

In a large bowl, combine all ingredients and toss. Serve at room temperature. Serve with your favorite flavor of Kay's Protein Chips. May go best with Kay's Lemon Herb Protein Chips. Makes 8 servings.
