Mediterranean Red Lentil Soup
1 cup red lentils
2 cups water
1 cup celery stalks
2 cloves garlic
1 tsp turmeric
1 tsp cumin
1/2 tsp salt
1/2 tsp pepper
Finely chop garlic, celery and carrots (or mix all together in a
food processor) and sauté with 1 tsp. olive or canola oil.
In a separate pot, bring red lentils and water to a boil. After
slow boiling for 15 minutes, add veggies and spices and reduce
heat. Let simmer until lentils cook and dissolve making a thick
consistency. Serve hot with a bag of Chili Nacho Cheese
Protein Chips. Makes 4, 8oz. servings..
